Steps

  • Generously butter the inside of two 1.2 litre pudding basins.
  • Spoon 50g of golden syrup into the base of each basin.
  • Beat the remaining syrup, butter, sugar, and zest until fluffy.
  • Mix in the eggs and flour gradually until reaching a dropping consistency.
  • Fill the basins three-quarters full and smooth the tops.
  • Cover loosely with clingfilm and microwave each pudding for five minutes.
  • Wait five minutes, run a knife around the edge, and invert onto a plate.
  • Drizzle with extra syrup and serve with warm custard.
