Steps

  • Fry the onion and garlic in oil until they are translucent.
  • Blanch the pumpkin in boiling water for five minutes until slightly soft.
  • Plunge the pumpkin into iced water to cool and then drain it.
  • Add the pumpkin and mixed spice to the onion mixture and stir well.
  • Add the sugar, vinegar, salt, and pepper and bring the mixture to the boil.
  • Simmer for 40 minutes until the pumpkin is very soft and the liquid has thickened.
  • Adjust the seasoning, stir in the chopped sage, and let it cool before serving.
