Steps

  • Preheat the oven to 170°C.
  • Peel, seed, and chop the pumpkin into 1.5cm cubes.
  • Combine everything except the herbs in a large saucepan and bring to a boil.
  • Simmer uncovered for 30 to 45 minutes until the pumpkin is tender.
  • Sterilise the jars by washing and heating them in the oven for 10 minutes.
  • Roughly chop the fresh herbs and stir them into the chutney.
  • Spoon the mixture into the hot sterilised jars.
  • Store in a cool dark place for 3 weeks before consuming.
