Steps

  • Defrost the frozen prawns in a bowl of cold water for 10 minutes.
  • Bring the vegetable stock to a boil in a saucepan.
  • Add the chilli, mushrooms, lime juice, fish sauce, sugar, and spring onion whites to the stock.
  • Boil the mixture and simmer for 1 minute.
  • Drain the prawns and add them to the saucepan.
  • Simmer for 2 minutes until prawns are pink and cooked through.
  • Stir in the spring onion greens and coriander leaves before serving.
