Steps

  • Place the prawns and crayfish into a steamer over boiling water.
  • Steam for 4 to 5 minutes until pink, then cool, peel, and discard shells.
  • Blend egg yolks, vinegar, and mustard in a food processor until pale.
  • Gradually pour in oil while blending to create a thick mayonnaise.
  • Mix the mayonnaise with ketchup, Worcestershire sauce, Tabasco, brandy, lemon juice, salt, and pepper.
  • Stir the cooked seafood into the cocktail sauce.
  • Arrange lettuce leaves in the bottom of four serving glasses.
  • Spoon the seafood mixture onto the lettuce and sprinkle with cayenne pepper.
