Method

Preheat the oven to 200°C.

Toss the pork in a bowl with olive oil, salt, and black pepper.

Stir-fry the pork in a hot frying pan for six minutes until cooked.

Soften chilli, garlic, and shallots in olive oil in a small pan for one minute.

Add sugar, vinegar, and parsley then cook for ten minutes while stirring.

Serve the pork alongside the chutney and garnish with fresh parsley.
