Steps

  • Preheat the oven to 200°C.
  • Toss the pork in a bowl with olive oil, salt, and black pepper.
  • Stir-fry the pork in a hot frying pan for six minutes until cooked.
  • Soften chilli, garlic, and shallots in olive oil in a small pan for one minute.
  • Add sugar, vinegar, and parsley then cook for ten minutes while stirring.
  • Serve the pork alongside the chutney and garnish with fresh parsley.
