Steps

  • Flatten pork chops between cling film to a 0.5cm thickness using a meat mallet.
  • Mix breadcrumbs, parmesan, and lemon zest in a bowl and season well.
  • Dip each pork chop into beaten egg and dredge thoroughly in the breadcrumb mixture.
  • Fry pork chops in hot oil for 4 minutes per side until golden and cooked through.
  • Drain the cooked pork on kitchen paper to remove excess oil.
  • Whisk fresh herbs, capers, lemon zest, juice, and garlic together to create the sauce.
  • Serve each pork chop with two potatoes and a drizzle of the herb sauce.
