Steps

  • Slice the pork into 5cm pieces.
  • Mix the pork with rice wine, soy sauce, sesame oil, and cornflour in a bowl.
  • Marinate the pork for 20 minutes.
  • Heat a wok until hot and add half the groundnut oil.
  • Stir-fry the marinated pork for 3 minutes and remove from the wok.
  • Clean the wok, reheat it, and add the remaining oil.
  • Quickly fry the black beans, garlic, spring onions, and shallots.
  • Add the remaining sauce ingredients and bring to a boil.
  • Return the pork to the wok and stir-fry for 5 minutes.
  • Transfer to a platter and serve immediately.
