Steps

  • Preheat the oven to 180°C.
  • Heat vegetable oil in an ovenproof pan.
  • Season pork medallions with salt and pepper and brown in the pan.
  • Roast the pork in the oven for five minutes until cooked through.
  • Boil chicken stock, soy sauce, sesame oil, spring onion, and chilli in a separate pan.
  • Add noodles and simmer for four minutes until tender.
  • Stir in the chopped coriander and cashew nuts.
  • Ladle broth into a bowl, top with pork, and garnish with coriander.
