Method

Whisk the egg whites while slowly adding 110g of vanilla sugar.

Bring 570ml of milk and the split vanilla pod to a gentle simmer in a pan.

Quenelle the meringue using two spoons and poach in milk for 40 seconds per side.

Warm the mixed berries and extra vanilla sugar in a pan until softened.

Serve the poached meringues on top of the warm fruit compôte.
