Steps

  • Boil the water, vinegar, sugar, and all spices and zest in a large non-reactive pan.
  • Add the pears and simmer covered for 10 to 15 minutes until tender.
  • Remove the pears with a slotted spoon and set them aside.
  • Boil the liquid for 5 minutes until reduced and thickened.
  • Place pears into two 1.5 litre sterilised jars and pour over the liquid and spices.
  • Add a rosemary sprig to each jar and seal tightly.
