Steps

  • Heat 1 tbsp of oil in a large saucepan and brown the onion and pork until soft.
  • Stir in the pearl barley and spinach for two minutes.
  • Add the white wine and cook until it evaporates.
  • Gradually add 1 L of stock ladle by ladle, allowing absorption between each until barley is cooked.
  • Remove from heat, stir in remaining oil and parsley, and season before serving.
