Steps

  • Mash bananas in a bowl until smooth.
  • Beat in yoghurt, milk, and honey.
  • Freeze the mixture in a covered container.
  • Break up ice crystals with a fork every 30 minutes for 4 hours.
  • Preheat oven to 175°C and line baking sheets.
  • Cream margarine and sugar until pale.
  • Beat in the egg, some flour, syrup, and peanut butter.
  • Stir in remaining flour, bicarbonate of soda, and peanuts.
  • Drop dessertspoons of dough onto sheets and flatten slightly.
  • Bake for 10 minutes then cool completely on a rack.
  • Sandwich ice cream between two cookies to serve.
