Steps

  • Heat the olive oil in a frying pan over a medium heat.
  • Fry the garlic and sage for 2 minutes until golden.
  • Sauté the butternut squash for 4 minutes until golden.
  • Add the white wine and cook for one minute.
  • Add the double cream and 50ml of water, then simmer for five minutes.
  • Toss in the pasta and season with salt and pepper.
