Steps

  • Heat a frying pan and cook caster sugar until melted and light golden-brown.
  • Add plums, onion, vinegar, star anise, and cinnamon, then cook for 8 minutes until tender.
  • Season with salt and pepper then set aside to cool.
  • Wrap the Parma ham slices around the mozzarella quarters.
  • Heat a frying pan with 15ml of olive oil and fry parcels until crisp.
  • Sprinkle sesame seeds over the parcels.
  • Drizzle remaining olive oil over ciabatta slices.
  • Grill bread on a hot griddle pan for 2 minutes per side until golden.
  • Serve mozzarella wedges with a spoonful of chutney and bread.
