Steps

  • Blend the basil, 30ml oil, and garlic in a food processor until smooth.
  • Season the basil oil with salt and pepper to taste.
  • Spoon the basil oil onto one side of the sliced tomatoes.
  • Heat 15ml of oil in a frying pan over a high heat.
  • Coat the tomato slices in flour.
  • Fry the tomatoes for 2 to 3 minutes per side until golden.
