Method

Preheat the oven to 180°C.

Season the fish with salt and pepper and fry in oil for 3 minutes per side until golden.

Drizzle olive oil over pepper halves and fry skin-down for 4 minutes until blistered.

Roast the peppers in the oven for 12 minutes until tender.

Fry the aubergine and garlic in a chargrill pan for 3 minutes per side until tender.
