Method

Simmer 50g sugar, a pinch of chilli flakes, and 75ml water in a small pan until syrupy, then cool.

Coat 150g flattened pork fillet in olive oil, salt, and pepper.

Sear the pork in a hot non-stick pan for two minutes on each side.

Remove the pork from the heat and allow it to rest for two minutes.

Slice the pork into five pieces and place them on a plate.

Scatter watercress around the pork and drizzle with the prepared dressing.
