Steps

  • Simmer 50g sugar, a pinch of chilli flakes, and 75ml water in a small pan until syrupy, then cool.
  • Coat 150g flattened pork fillet in olive oil, salt, and pepper.
  • Sear the pork in a hot non-stick pan for two minutes on each side.
  • Remove the pork from the heat and allow it to rest for two minutes.
  • Slice the pork into five pieces and place them on a plate.
  • Scatter watercress around the pork and drizzle with the prepared dressing.
