Steps

  • Preheat the oven to 180°C.
  • Heat olive oil in an ovenproof frying pan and season the cod with salt and pepper.
  • Fry the cod skin-side down for 3 minutes until the skin is crisp.
  • Turn the cod over and roast in the oven for 5 minutes until cooked through.
  • Spread tomato slices across the base of a small ovenproof dish.
  • Melt the cheese and wine together in a small pan, stirring frequently until combined.
  • Pour the cheese mixture over the tomatoes and bake for 10 minutes until golden.
  • Serve the gratin topped with the roasted cod and crispy bacon.
