Steps

  • Preheat the oven to 240°C.
  • Oil a shallow roasting tin with 30ml of olive oil.
  • Place halved tomatoes cut-side up in the tin.
  • Sprinkle with thyme, salt, and pepper and roast for 15 minutes.
  • Reduce oven temperature to 150°C and roast for 90 minutes.
  • Remove from oven and allow tomatoes to cool.
  • Arrange tomatoes and feta on plates and drizzle with remaining oil.
  • Garnish with additional sea salt and black pepper before serving.
