Steps

  • Heat the vegetable oil in a deep heavy-bottomed saucepan until very hot.
  • Whisk the flour and 100ml of sparkling water in a bowl to form a batter.
  • Mix the chopped chives and turmeric into the batter.
  • Dip the onion rings into the batter and carefully lower them into the hot oil.
  • Deep-fry the rings until they are crisp and golden.
  • Remove the rings with a slotted spoon and drain them on kitchen paper.
  • Transfer to a plate and sprinkle with sea salt to serve.
