Steps

  • Bring 1 litre of water to a boil in a medium wok.
  • Add miso paste and ginger, then simmer on medium heat for 5 minutes.
  • Add somen noodles, pak choy, and seafood to the wok.
  • Cook for 1 minute until mussel shells open, discarding any that remain closed.
  • Season the broth with rice wine, soy sauce, salt, and pepper.
  • Serve in deep bowls immediately topped with coriander.
