Steps

  • Preheat the oven to 170°C.
  • Heat oil in a pan and gently fry potatoes, onion, garlic, herbs, and spices for 15 minutes.
  • Add chorizo and cook covered for 5 minutes.
  • Stir in parsley and spinach for 30 seconds.
  • Mix in the beaten eggs and transfer to a 20cm non-stick ovenproof frying pan.
  • Bake for 15 minutes until the eggs are cooked.
  • Rest for 5 minutes before turning out and slicing into wedges.
