Steps

  • Preheat the oven to 200°C.
  • Blend pastry ingredients in a food processor until dough forms then chill for 10 minutes.
  • Melt butter in a small ovenproof pan and stir in sugar until dissolved.
  • Add galangal or ginger to the pan and cook for two minutes.
  • Place nectarines cut-side down in the pan and cook for five minutes.
  • Cover fruit with a pastry disc, seal edges, and bake for 12 minutes until golden.
  • Invert onto a plate, dust with icing sugar, and serve with whipped cream.
