Steps

  • Boil the new potatoes in a saucepan of water until tender, then drain.
  • Divide oil and onion between two frying pans and cook gently for 10 minutes until soft.
  • Add nduja and chilli to each pan and cook for 3 minutes.
  • Stir in the Serrano ham and cook for 3 more minutes.
  • Add potatoes, capers, and butter to pans and fry until the potatoes are crisp.
  • Make holes in the hash, crack eggs into them, cover, and cook for 3 minutes.
  • Toast the bread on a griddle pan until crisp.
  • Serve hash with eggs on plates, topped with parsley, bread, and chilli sauce.
