Steps

  • Combine the spices and coat the lamb steaks evenly.
  • Drizzle the steaks with olive oil.
  • Sear the lamb in a smoking hot griddle pan for 4 minutes per side.
  • Remove the lamb and keep warm on a separate plate.
  • Sauté the red onion, red pepper, and garlic in the same pan for 2 minutes.
  • Stir in the lime juice and chopped chives.
  • Return the lamb to the pan and heat through.
  • Season to taste with salt and black pepper.
