Steps

  • Preheat the oven to 220°C.
  • Wrap the monkfish in prosciutto and season with black pepper.
  • Heat oil in an ovenproof pan and fry monkfish for 2–3 minutes until browned.
  • Roast in the oven for 8 minutes and let rest for 5 minutes.
  • Sauté spring onions and garlic in oil for 1 minute, then stir in tomatoes and basil.
  • Wilt the spinach in a separate pan with oil for 2 minutes.
  • Serve the fish with spinach and top with the tomato sauce.
