Steps

  • Preheat the oven to 200°C.
  • Dust the pastry square with icing sugar and place the berries in the centre.
  • Brush the pastry edges with beaten egg and pinch the corners together to seal.
  • Bake the parcel on a non-stick sheet for 10-12 minutes until golden-brown.
  • Blend berries and icing sugar in a food processor and strain through a sieve.
  • Pour the coulis onto a plate, top with the parcel, and garnish with mint.
