Steps

  • Gradually whisk the egg into the flour.
  • Slowly stir in the water and milk until the batter is smooth.
  • Place a few drops of oil into each muffin tray hole and heat in a medium oven.
  • Pour 2.5cm of batter into each hole and bake for 8-10 minutes until puffed.
  • Transfer the puddings to a rack to cool.
  • Mix the crème fraîche, horseradish, salt, and pepper in a bowl.
  • Cook the beef fillets to your preferred doneness and slice them thinly.
  • Assemble by placing beef and horseradish cream onto each pudding and garnish with parsley.
