Method

Heat oil in a casserole dish and cook onion, garlic, celery, and carrots for 15 minutes until soft.

Add the beef mince and cook for 5 minutes.

Stir in tomatoes, purée, stock, wine, sugar, and bay leaf, then simmer for 20 minutes.

Mix flour, suet, salt, parsley, and 200ml water into a spongy dough and roll into 12 balls.

Place dumplings on the mince, cover, and cook for 20 minutes until risen.
