Steps

  • Preheat the oven to 100°C and line a tray with baking parchment.
  • Whisk egg whites in a clean bowl until soft peaks form.
  • Gradually whisk in the caster sugar until stiff peaks form.
  • Spoon the mixture into a piping bag with a nozzle.
  • Pipe 16 small rounds onto the prepared baking tray.
  • Bake in the oven for 20 minutes.
  • Turn off the oven and leave meringues inside for two hours.
  • Remove the crisp meringues from the oven.
  • Whisk cream and icing sugar to soft peaks and fold in half the strawberries.
  • Sandwich the cream and remaining strawberries between two meringue rounds.
