Steps

  • Preheat the oven to 150°C.
  • Whisk the egg whites in a large clean bowl until they form soft peaks.
  • Add 110g of sugar and continue whisking.
  • Gradually whisk in another 110g of sugar, one spoonful at a time, until stiff peaks form.
  • Gently fold in the remaining 130g of sugar.
  • Place 20 spoonfuls of the mixture onto lined baking sheets and bake for 15 minutes.
  • Lower the temperature to 110°C and cook for 2 to 3 hours until crisp and dry.
  • Cool completely and serve with clotted cream and strawberries.
