Steps

  • Heat half the oil in a frying pan and fry the onion for 2-3 minutes until softened.
  • Add bacon and rabbit, frying for 2-3 minutes until golden-brown.
  • Stir in spices, stock cube, tomato purée, tomatoes, olives, herbs, and 50ml of water.
  • Simmer the mixture for 8-10 minutes until the rabbit is cooked through.
  • Season to taste with salt and pepper.
  • Fry black pudding slices in the remaining oil for 1-2 minutes per side until crisp.
  • Serve the stew in a bowl topped with black pudding and parsley.
