Steps

  • Remove pin bones from mackerel fillets and cut them into large diamonds.
  • Place fish in a deep dish with lemon slices, juniper berries, salt, pepper, and thyme.
  • Boil water, sugar, and lemon juice in a saucepan.
  • Add licorice and star anise to the pan and simmer for 1 minute.
  • Pour hot marinade over mackerel and cover with cling film.
  • Cool to room temperature then refrigerate for 2 to 3 hours.
  • Serve directly from the dish.
