Steps

  • Heat a large pan, add butter and apples, then cook for 7 minutes until soft.
  • Stir in sugar and lemon zest, cook for 3 minutes, then transfer to an ovenproof dish.
  • Preheat the grill to a medium temperature.
  • Melt half the topping butter in a saucepan and stir in cornflour until smooth.
  • Whisk in milk gradually and cook until the mixture thickens.
  • Remove from heat and whisk in sugar and eggs before spooning over the apples.
  • Sprinkle mixed demerara sugar and cinnamon over the top and dot with remaining butter.
  • Grill for 6 minutes until golden-brown and serve hot in bowls.
