Steps

  • Cook the macaroni in boiling salted water for 8-10 minutes and drain well.
  • Melt butter over medium heat, stir in flour to form a roux, and cook for several minutes.
  • Gradually whisk in the milk and cook for 10-15 minutes until the sauce is thickened and smooth.
  • Preheat the grill to a high temperature.
  • Remove sauce from heat, add 175g of cheese, and stir until melted.
  • Mix the macaroni into the sauce and transfer to a deep ovenproof dish.
  • Sprinkle with remaining cheddar and parmesan, then grill until browned and bubbling.
