Steps

  • Place two 10cm diameter chefs' rings on plates and line the edges with sliced strawberries.
  • Whisk the double cream in a bowl until soft peaks form.
  • Stir in the yoghurt, condensed milk, lime zest, and lime juice to thicken the mixture.
  • Spoon the cream mixture into the rings and level the tops.
  • Chill the cheesecakes in the fridge for at least 5 to 10 minutes to set.
  • Heat the outside of the rings with a blowtorch to release the cheesecakes.
  • Drizzle with melted dark chocolate and serve immediately.
