Steps

  • Preheat the oven to 180°C.
  • Mix the egg whites, sugar, coconut, lime zest, and juice by hand in a bowl.
  • Press the mixture into a flat square approximately 1cm high.
  • Cut out small rounds using an upturned liqueur glass and place on a baking tray.
  • Bake in the centre of the oven for 12 to 15 minutes until lightly golden.
  • Cool the macaroons completely on a wire rack.
