Steps

  • Line a 20cm tart ring with the sweet pastry and bake blind until set.
  • Melt the chocolate, butter, and cream together in a bowl set over boiling water.
  • Whisk the eggs, egg yolk, and sugar on full speed in a mixer until thick and light.
  • Fold the whisked egg mixture carefully into the melted chocolate mixture.
  • Fill the tart case to the top with the chocolate mixture.
  • Bake in a cool oven at 150°C for 10 minutes and let cool completely.
