Steps

  • Combine egg white, cornflour, salt, sesame oil, and chicken in a bowl.
  • Marinate the chicken mixture for 20 minutes.
  • Heat 250ml groundnut oil in a wok until smoking.
  • Flash fry the chicken until white, then drain and discard the oil.
  • Whisk stock, lemon, sugar, soy, sherry, garlic, and chilli in the wok.
  • Bring to a boil and stir in the cornflour mixture to thicken.
  • Add the chicken back to the wok and stir-fry until coated and heated through.
  • Drizzle with sesame oil and serve topped with spring onions.
