Steps

  • Preheat the oven to 200°C.
  • Brush filo pastry with butter, fold, and press into a chef's ring on a baking sheet.
  • Bake the pastry for eight minutes until golden-brown.
  • Heat olive oil in a pan and sauté the leeks for 4 minutes until soft.
  • Whisk eggs, cream, chives, salt, and pepper in a bowl.
  • Stir the cooked leeks into the egg mixture.
  • Pour filling into the pastry case and top with crumbled Stilton.
  • Bake for 10 minutes until the filling sets.
  • Remove the ring and garnish with fresh chives to serve.
