Steps

  • Dry fry the sunflower seeds in a pan over low heat for 1-2 minutes until toasted.
  • Stir in the soy sauce and cook until the liquid has evaporated, then set seeds aside.
  • Melt the butter, sugars, salt, and 30ml of water in a saucepan over low heat until dissolved.
  • Boil the mixture on moderate heat until it reaches 150°C.
  • Remove from heat and stir in the lavender flowers.
  • Pour the mixture into silicone moulds and sprinkle with the toasted sunflower seeds.
  • Allow the brittle to harden before removing from the moulds to serve.
