Steps

  • Bring milk and butter to room temperature.
  • Dissolve yeast in 200ml of milk with 5g of sugar and let foam for 15 minutes.
  • Beat in all remaining ingredients except flour and almonds.
  • Mix in 675g of flour to form a smooth dough and refrigerate overnight.
  • Divide dough into three pieces and roll into long even lengths.
  • Plait the dough into a ring and prove until doubled in size.
  • Brush with egg yolk and scatter with almonds and ground cardamom.
  • Bake at 190°C for 30 minutes until golden and hollow sounding.
  • Remove from oven and dredge generously with icing sugar.
