Steps

  • Preheat the oven to 220°C.
  • Toast the dry ingredients in a pan and grind into a powder.
  • Mix the lamb with lime juice, zest, and spice powder.
  • Form the mixture onto wooden skewers and let them rest.
  • Combine the yoghurt, cucumber, mint, and lemon in a bowl.
  • Griddle the koftas on a hot pan until charred on all sides.
  • Transfer the pan to the oven and bake for 10 minutes.
  • Serve the koftas topped with fresh coriander and yoghurt sauce.
