Steps

  • Toss the lamb strips with the grated onion in a mixing bowl.
  • Mash garlic with salt and add it to the lamb with pepper, cumin, cayenne, and olive oil.
  • Cover the mixture and marinate in the refrigerator for at least 20 minutes.
  • Heat a heavy frying pan or griddle until very hot.
  • Cook the lamb for two minutes on each side.
  • Warm the pitta breads and slice them to form pockets.
  • Fill the pockets with lamb, lemon juice, yoghurt, oregano, and spring onions and serve.
