Steps

  • Cook sliced onions in a pan with butter and oil over very low heat.
  • Caramelize onions for 15 minutes while marinating drained capers in olive oil and seasoning.
  • Smash potatoes with butter and seasoning, then place in a ring mold topped with rocket.
  • Layer tomato slices, onions, capers, and goat's cheese on top of the rocket.
  • Grill the stack under medium heat for two to three minutes.
  • Serve the stack with remaining rocket and a drizzle of olive oil.
