Steps

  • Combine yeast, sugar, and 280ml warm water in a large bowl.
  • Whisk in 75g of flour and leave for ten minutes to activate the yeast.
  • Add the olive oil and mix well.
  • Incorporate remaining flour, salt, cheeses, Italian seasoning, garlic powder, and jalapeños.
  • Knead dough on a lightly oiled surface for 5 to 8 minutes.
  • Place dough in an oiled bowl, cover, and rest for 30 minutes.
  • Preheat oven to 190°C and prepare two oiled and floured baking trays.
  • Mix the rub ingredients in a small bowl.
  • Roll dough to 28cm long, brush with egg yolk, and apply the rub.
  • Cut dough into strips, twist into spirals, and place on baking trays.
  • Bake for 15 to 20 minutes until golden-brown and firm.
  • Cool the breadsticks on the baking trays.
