Combine yeast, sugar, and 280ml warm water in a large bowl.
Whisk in 75g of flour and leave for ten minutes to activate the yeast.
Add the olive oil and mix well.
Incorporate remaining flour, salt, cheeses, Italian seasoning, garlic powder, and jalapeños.
Knead dough on a lightly oiled surface for 5 to 8 minutes.
Place dough in an oiled bowl, cover, and rest for 30 minutes.
Preheat oven to 190°C and prepare two oiled and floured baking trays.
Mix the rub ingredients in a small bowl.
Roll dough to 28cm long, brush with egg yolk, and apply the rub.
Cut dough into strips, twist into spirals, and place on baking trays.
Bake for 15 to 20 minutes until golden-brown and firm.
Cool the breadsticks on the baking trays.
