Steps

  • Preheat the oven to 200°C.
  • Sift both flours, caster sugar, and baking powder into a large bowl.
  • Mix in the lemon zest, cinnamon, cloves, star anise, and nutmeg.
  • Stir in the sultanas and glace cherries.
  • Whisk the milk, egg, and yoghurt together in a separate clean bowl.
  • Melt the honey and butter in a pan over medium heat and stir to combine.
  • Mix the melted honey and butter into the liquid egg and yoghurt mixture.
  • Fold the wet mixture into the dry ingredients until just combined.
  • Spoon into muffin cases and bake for 20-25 minutes until golden.
  • Cool the muffins on a wire rack.
  • Mix the icing sugar, lemon juice, and water into a smooth paste.
  • Spread icing on cooled muffins and decorate with silver sugar balls.
