Steps

  • Heat lard in a lidded pan and fry the onion for five minutes until softened.
  • Remove from heat, stir in paprika, add pork and a splash of water, then simmer for five minutes.
  • Add enough boiling water to cover meat, bring back to boil, and add tomato purée, green pepper, and tomatoes.
  • Season with salt and pepper, cover, and simmer for 1 hour until the pork is tender.
  • Mix cornflour with two tablespoons of cold water to form a paste and stir into the stew.
  • Bring to the boil to thicken the sauce and adjust seasoning to taste.
