Steps

  • Mix flour, starter, water, sugar, and salt in a bowl.
  • Knead the dough on a clean surface for 10 minutes until transparently thin.
  • Place dough in an oiled bowl, cover with a damp towel, and prove for 3 hours.
  • Turn out the dough, knock it back, and divide into two ball shapes.
  • Place loaves seam side up in floured tea towel-lined bowls and prove for 2.5 hours.
  • Preheat oven to 230°C and place a tin with water at the bottom for steam.
  • Score the tops of the loaves and bake for 40 minutes until they sound hollow.
